A cup of flour is not a weight

A cup is a measure of volume. Flour is sold by weight. Converting between them requires knowing how densely the flour is packed, and that turns out to depend almost entirely on how it got into the cup.
The same cup, three different weights
Dip the cup into the bag and level it off and you compress the flour: you might get 150 grams. Spoon it in loosely and level it and you might get 120. Sift it first and you could be under 110.
That is a spread of roughly 30%. In a sauce it does not matter. In bread or pastry, where the ratio of flour to water is the recipe, it is the difference between what you meant to make and something else.
This is why serious baking recipes give weights, and why the same recipe published in the US and the UK often disagrees about how many grams a cup of flour is. Both are right about their own method.
Which is why our figures are approximate, and say so
Our cups to grams converter uses a published density per ingredient. Those are good central estimates and they are genuinely useful for the everyday case. They are not, and cannot be, exact for your bag of flour on your kitchen counter.
Ingredients vary too. Brown sugar depends entirely on how hard you packed it. Cocoa settles. Honey and syrup cling to the cup and leave several grams behind. Butter is dense and consistent, which is why it is one of the few things volume measurement handles well.
The cup is not even one size
A US customary cup is about 237 ml. A US legal cup, used on nutrition labels, is 240. A metric cup is 250. An old British imperial cup was 284. A recipe rarely tells you which it means.
Our volume conversions are US measures. If you are cooking from an Australian or older British recipe, the gap is real and compounds across an ingredient list.
When it matters, weigh it
A digital scale costs very little and removes the entire class of problem. Put the bowl on, zero it, add the ingredient, zero it again. It is faster than measuring cups, it dirties fewer things, and it makes a recipe reproducible — which is the actual goal.
Use the converter to understand a recipe written in cups. Use a scale to cook it twice the same way.
